Sinigang na Baboy: Pork Soup with Tamarind Mix

My husband accompanied me to the grocery yesterday and I asked him what he wants for lunch today. He said sinigang na baboy (pork soup with tamarind mix). So I decided to grant his wish. Besides, I love cooking soup-based meals since it's an all-in-one meal.

The grocery we went to was out of pork pieces specifically for sinigang. I had to settle for liempo. Unfortunately, the pork pieces we got had lots of fat in it. But the good thing with this kind of dish is that it's not fried and there are vegetables so I still consider it somewhat healthy.


Ingredients:

1 1/2 kilo pork liempo
gabi (taro)
enough water to cover the pork
1 pack tamarind mix (I used Knorr's sinigang sa sampaloc mix with gabi)
onions, chopped
tomatoes, sliced
chili pecante (about 5 pieces)
kangkong leaves

Procedure:

Combine the water, pork and gabi and cook in a pressure cooker, about 5 minutes. Remove from pressure cooker (be careful, it's hot) and transfer to another pot. Add the tamarind mix, onions, tomatoes and chili. Let it boil and simmer for about 20 minutes in order to let all the juices out. Add the kangkong leaves and let it boil again. Remove from heat. Best served with rice and patis (fish) sauce with siling labuyo. Yummy!

And for dessert? Voila! Bibingka (sweet rice cake) which was a pasalubong from my husband after he came home from the gym this morning. (Sweet noh?!)

Aay, thanks Ladybug. I haven't eaten sinigang for months now. :( Oh, Knorr mix with gabi na ha? That's good.

Wow..sweet naman hubby mo. Ganyan dapat may pasalubong. Mukhang masarap yang bibingka na yan ha.

I love sinigang. To be honest I prefer the one made with chicken or fish. As you point out the pork comes with too much fat! :-(

It is a mystery why some people can't view my blog. An IT guy in India claims it caused by the underscores in My_Sarisari_Store. Underscores are illegal and not accepted by some servers.
So you will need to see your nephew more often ;-)

Sinigang is also one of our favourite dishes. We don't get kangkong here so I usually use Romaine lettuce and I also add green beans, in lieu of the sitaw. But I noticed that you don't have sitaw in your recipe.

niceheart> yes, sitaw can be added but my husband doesn't like it. Sitaw has a lot of uric acid. Medyo masakit na yung mga joints niya eh kaya baka makasama pa sa kanya.

You're right about sitaw. I don't eat that anymore. My mother is an arthritic beauty, so i try to avoid legumes, pero kain pa rin ng monggo, sus. :)

Sinigang na baboy, adobo, paksiw... kakagutom. Higit sa lahat, kaka homesick... Sarap higupin ng sabaw pag tapos mag badminton o mag tennis.

At iyong bibingka, sigurado ako doon yan sa may west avenue binili, Ferrino's (ewan ko, buhay pa kaya yon.)

sinigang's one of my favorites, too. something about the sourness that just makes it tasty. i wonder though how easy it is to make the tamarind mix from scratch instead of using the knorr packets.

ulam din namin ngayong weekend ang sinigang na baboy. my wife, jet, and i got ribs and she made sinigang. we can't get kangkong, so we substitute it with spinach. she uses mexican pepper instead of the asian versions we get at home. but it does still taste like homecooked sinigang.

this is the ultimate soul food for us OFWs who miss home so much.

myepinoy> hahaha, pati ako nagutom sa mga pagkain na binanggit mo. Ay teka, hindi sa Ferrinos binili yung bibingka although gusto ko rin bibingka dun, tsaka mas malaki pa bibingka doon. Dumadami naman yata branches ng Ferrinos dito eh. Sa Bahay Kakanin yata nabili ni husband yung bibingka.

kyels> Yes, it's easily available in food courts located inside the malls. Food stalls specializing in Filipino cuisine will usually offer sinigang na baboy and sinigang na isda. You can also order from restaurants specializing in Filipino cuisine like Goldilock's, Max's, Sentro, Dencio's, Crocodile Grill, Aristocrat, etc. You can ask around. Thanks for dropping by!
